These Protein-Packed Mediterranean Egg Muffins Make Mornings Easier

Creamy goat cheese, tender spinach, and tangy sun-dried tomatoes turn basic eggs into a hormone-healthy, low-effort breakfast.

Culinary creator and nutritionist Paige Lindgren designed her debut cookbook, Sync & Savor, around supporting hormone health. But Lindgren's spinach, goat cheese, and sun-dried tomato Mediterranean egg muffins are so delicious, protein-packed, and satisfying, they’re worth making no matter what.

"I’m all about breakfasts that feel a little fancy but take basically no effort, and these egg muffins are exactly that," Lindgren writes. "The muffins are also meal-prep friendly, freeing up your mornings for sunlight, a walk with friends, a workout class, or journaling instead of cooking." Because even a little boost of self-care in the A.M. can change the course of your day for the better.

To get started, you'll whisk and season a dozen eggs before folding in the tomatoes, spinach, and goat cheese. Pour the mix into a muffin tray, then bake for 20 minutes.

Mediterranean Goat Cheese and Spinach Egg Muffin Recipe

Makes: 12 muffins (6 servings)

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients

  • 12 large eggs
  • 2 teaspoons dried oregano
  • Salt and freshly ground black pepper
  • 1⁄2 cup sun-dried
  • tomatoes, diced
  • 1⁄2 cup chopped baby spinach
  • 1⁄2 cup crumbled goat cheese

Instructions

  1. Preheat the oven to 375°F. Grease a 12-cup muffin tin.
  2. In a large bowl, lightly whisk the eggs and season them with the oregano, salt, and pepper to taste. Fold in the tomatoes, spinach, and goat cheese. 
  3. Pour the mixture into the muffin cups, filling each cup about three-fourths full.
  4. Bake the muffins for 20 minutes, until set; test to see that a toothpick inserted in the center comes out clean.
  5. Allow the muffins to cool briefly and then pop them out of the tin. Place 2 muffins on your plate and enjoy. (Store the extra muffins in an airtight container for up to 4 days. Reheat them in the microwave for 20 to 30 seconds or in a toaster oven at 350°F for 5 minutes, until warmed through.)
