This is such a simple pasta, and it’s a huge hit in our house. You definitely don’t need to be a chef to make it: I just wing it. But with so many fresh ingredients, the result is delicious. You can also do this with pesto, which I love to throw in whenever possible.
Here’s how it all comes together:
Ingredients:
2 or 3 zucchinis
2 cloves of garlic
cherry tomatoes (as many as you’d like!)
basil
salt & pepper
pasta of your choice
olive oil
Directions:
Slice two or three zucchinis thinly in circles and chop two cloves of garlic. Sauté the zucchini and garlic in olive oil until soft. Take off stove. Mix as many cherry tomatoes as you’d like with the zucchini. Cook pasta (any kind but I used linguine). Drain.
Pour tomatoes and zucchini and garlic mixture over pasta. And a little more oil if you want, then add salt and pepper to taste, and some basil. Mix lightly and…voila!
