Celebrity chef Dan Churchill on his marathon of a weekend — and his suggestions on how you should spend yours!
Celebrity chef Dan Churchill, AKA “The Healthy Chef,” knows a thing or two about the importance of food. That’s why the Dude Food author has teamed up with City Harvest, New York City’s largest food rescue organization. This weekend, Churchill will be running the New York City Marathon to raise money for the organization. Churchill tells us, “City Harvest stands for two things that are very dear and close to my heart: providing food for those in need, and preventing food waste.” He points out, “In New York City, one in five people don’t know where their next meal is going to come from, and 40 percent of food is wasted. I believe it’s my responsibility as a chef to support hunger relief organizations such as City Harvest.” Luckily, he doesn’t mind a brisk jog. “Running is a passion of mine, and being able to couple this with raising money for an incredible organization is a double win.”
If you’re not running the marathon this weekend, Churchill has graciously volunteered some advice on what to do, including watching a new movie from a classic franchise and reading a book that will reshape how you think about plants. What to Watch: A movie I would recommend is James Bond No Time To Die. It’s an awesome movie — I loved it. It’s really well done. And it takes me away from business for three hours of my life, which is a good thing!
What to Read: The Proof Is in The Plants by Simon Hill. Unbelievable book. It provides evidence-based information on plant-based nutrition and it’s honestly one of the best books I have ever read.
What to Listen To: I would say The Epic Table Podcast (shameless plug), Rich Roll Podcast, or The Plant Proof Podcast. These three are ones I think people should have in their rolodex of informative, yet conversational podcasts to listen to. With all of those, you’ll find yourself getting educated on nutrition, specific plant-based food, performance, and even spirituality.
What to Wear: I’ve been loving Ten Thousand for athleisure, especially as I’ve been training for the marathon. I’ve been enjoying the FAR collection, which is a collaboration between Rich Roll and Ten Thousand.
What to Cook: I’m carbo-loading at the moment. Lots of plant-based pasta. I like to make pasta with an extra veggie twist. I’m really into pasta dishes at the moment. I think as you get into this colder section of the year, comfort food becomes king!
