When you open Instagram, do you find yourself scrolling through cooking videos in hopes of gaining inspiration and some fun new faves? You’re not alone — Katie loves looking at viral recipes that she hopes to make. In an effort to actually get cooking, she and her friend Kelly Rizzo have started a new video series called Is It As Good As It Looks?
In these witty and ultra-watchable tutorials, Katie and Rizzo will try their hand at the recipes currently dominating social media. On the menu this week? A high-protein, lower-carb version of pizza that’s rumored to be as good as the real thing. To make it, you’ll primarily use cottage cheese and eggs to create a “crust” that’s thickened with only a quarter cup flour (note that you can use whatever kind of flour you’ve got in your pantry, be it all-purpose or almond). After the crust is golden brown, you’ll finish it off with sauce, cheese, and whatever toppings call to you (seriously, go nuts).
Spoiler alert: Katie and Kelly didn’t think this version of pizza was quite as good as a regular slice. That said, you can watch the video to see if the end result looks tempting — if you’re interested and have the ingredients on hand, you may have better luck than our dynamic duo.
Cottage Cheese Pizza Crust
Ingredients
- 1 cup cottage cheese
- 2 eggs
- ¼ cup flour of choice
- ¼ tsp oregano
- ½ tsp garlic powder
- ½-⅔ cup pizza sauce
- 1 cup shredded mozzarella
- Pepperoni or any other toppings you like
Instructions
- Preheat oven to 350°. Mix the first five ingredients in a bowl — do not overmix.
- Pour out mixture onto parchment paper that is lining a cookie sheet. Shape into a circle that is not too thin.
- Bake crust for 30-35 min until golden brown.
- Remove crust and top with sauce first, then cheese, then desired toppings. Bake again for about 5-10 minutes until cheese is melted and toppings are cooked and hot. Slice and enjoy!
