Katie’s Killer Guacamole Recipe

Just squeeze, mash, and dip.

There’s almost nothing more summery to me than a big bowl of guacamole (besides pool parties and a garden full of tomatoes, that is). But you can enjoy my fantastic guac recipe any time of year, whether you’re having company or just having a night in front of the TV. Try this with tortilla chips (of course), or get creative and dollop it on top of eggs or spread it onto a sandwich. It’s so simple, and so, so satisfying.

Ingredients:
-8 avocados
-1 finely chopped jalapeno pepper
-1 medium red onion, chopped
-the juice of 2 limes
-1 large tomato, seeded and chopped fine
-a fistful of cilantro, finely chopped (save a sprig for the garnish!)
-Tabasco sauce to taste
-salt and pepper to taste

Directions:
It couldn’t be easier: Just mash up the avocados (I use a potato masher to keep my guac a little chunky, the way I prefer it). Then add the rest of the ingredients, and enjoy!
