Who Needs Booze? This Carrot Cake Mocktail Brings the Party

"I'm a huge fan of carrot cake because it has a lot of flavor, texture, and, of course, cream cheese icing," writes author Blair Horton in her book, Everyday Elixirs. "And since anything I love becomes inspiration, I created this creamy, spiced drink with the comforting flavors of carrot cake while delivering a nutrient-packed boost."

Horton emphasizes nutrition in this stunning recipe: "Carrot juice provides a dose of vitamin A for healthy skin and eyes, while orange juice and coconut cream add immune-boosting vitamin C and healthy fats." Each flavor component provides an additional health benefit: "The warming spices like cinnamon and ginger are known for their anti-inflammatory properties, making this a delicious and functional indulgence."

Healthy living aside, we also adore that the drink comes together in a couple of unbelievably simple steps, using ingredients that you can find at your local supermarket. This mocktail is proof that decadence, nutrition, and convenience can happily coexist.

Carrot Cake Mocktail Recipe

Serves 1

Ingredients

  • 2 ounces carrot juice
  • 1½ ounces orange juice
  • 1 ounce unsweetened coconut cream 
  • ¼ ounce lime juice
  • 1 teaspoon vanilla bean paste 
  • Pinch of orange zest
  • Pinch of ground Ceylon cinnamon 
  • Pinch of ground ginger
  • Pinch of sea salt or mineral salt

Instructions

  1. Fill a shaker with ice, then add the carrot juice, orange juice, coconut cream, lime juice, vanilla bean paste, orange zest, cinnamon, ginger, and salt. Shake vigorously to mix and chill.
  2. Strain into a glass filled with fresh ice.

Choose a Garnish: Add a dehydrated lime or orange slice, or both, for extra flair.

Dress Your Glass: Combine cinnamon and sugar, then use honey to coat the rim before dipping in the mixture.
