Who among us is not trying to cut down their grocery bill (without compromising on flavor)? Bestselling cookbook author Carleigh Bodrug has built a reputation for crafty cooking hacks that reduce waste and save cash; even better, her tips will help you become a more adept home chef.
Case in point: Her quick and easy citrus cabbage slaw. “This slaw is crunchy, crisp, and refreshing,” Bodrug writes in her cookbook PlantYou: Scrappy Cooking: 140+ Plant-Based Zero-Waste Recipes That Are Good for You, Your Wallet, and the Planet, “and the perfect pairing to any plant-filled meal.”
As you probably imagined, this side dish is an easy way to get your veggies: “…it uses up an entire head of cabbage, along with carrot, green onions, and a full broccoli stem.” Plus, if you’re averse to mayo-heavy slaw, you’ll enjoy Bodrug’s light dressing, a bright and breezy alternative just as flavorful as a more traditional drizzle. As Bodrug writes, “Get ready for a slaw-some adventure!”
