Kimbal Musk Teaches Katie How to Make Soft Scrambled Eggs Like a Pro

Recently, Katie teamed up with The Kitchen chef and cookbook author Kimbal Musk to talk about his new book, The Kitchen Cookbook: Cooking for Your Community. While the two had plenty to gab about (their cowboy hats, being Elon Musk’s brother, etc.), they immediately whipped up a decadent plate of gooey, soft scrambled eggs. Craving some added opulence? Katie and Musk top their dishes with crème fraîche and a spoonful of caviar for a luscious finish. We’re sharing the recipe with you via this excerpt from his new cookbook.


One touchstone we return to again and again at The Kitchen is the joy of taking a seemingly humble ingredient and making it the star of the show. Kimbal’s scrambled eggs provide a deliciously rewarding and easy-to-prepare example of how this ethos plays out. You can eat them for breakfast every day, but why stop there? Whip some up for a simple lunch or a late-night snack. Or take them uptown as an appetizer served on bruschetta topped with Parmesan cheese and herbs.

One fun thing about these “daddy eggs,” as Kimbal’s kids have been known to call them, is the timing. Put your bread in the toaster, then start cooking the eggs; when the toast pops up, your eggs are ready. They take about as long to cook in the pan as it takes your bread to toast. When you get good at it, this makes for a fast, delicious, and easy eggs-and-toast breakfast for you and your family. 

Kimbal Musk’s Soft Scrambled Eggs Recipe

Ingredients

2 large eggs

Salt and freshly ground black pepper

1 ½ teaspoons butter

Bread for toast

Instructions

  1. Crack the eggs into a bowl. Sprinkle a pinch of salt over each egg yolk, then grind some pepper over the eggs. Whisk vigorously with a fork for about 20 seconds, until most of the whites are dissolved. Let the eggs sit in the bowl for about 1 minute while the salt dissolves the rest of the whites. 
  2. In that minute, take two slices of bread and pop them into the toast – that will be your timer! When the toast pops up, the eggs are ready. 
  3. Pour your egg mixture into a small non-stick skillet and add the butter. Turn the stove to medium-high heat and let the whisked eggs sit over the heat for 30 seconds to 1 minute until the egg just starts to cook around the edges, then start stirring. (If you’re fast, you should be able to grab a plate, knife, and fork while you’re waiting.)
  4. Slowly stir the mixture for about 30 seconds, until it starts to come together. Turn the heat down to low and finish cooking until the eggs are cooked to your preference. You can keep them really gooey (Kimbal’s daughter likes them really gooey) or cook them a bit longer, but don’t overcook – the soft in soft-scrambled is there for a reason. 
  5. Ding! The toast should be ready by now. Time to eat!
