Watermelon, Feta, Cucumber Salad

I love cooking as the weather gets hotter, probably because it’s easier than in other seasons — and because the wonderful, fresh ingredients are so delicious, they don’t need much help to become spectacular, flavorful dishes! When I wanted to make use of cucumbers from my garden, I made this delicious salad, replacing Persian cucumbers with good old fashioned ones. Here’s the recipe I used, which barely requires any time or and zero fuss.


Tomato-Mozzarella Salad With Balsamic Glaze

I have tomatoes coming out of my ears, so this simple tomato and mozzarella salad, with lots of fresh basil and balsamic glaze was so delicious. (My mother-in-law gave me a recipe to make the glaze, but honestly, it’s much easier to pick up at the grocery store) And when you use a variety of tomatoes, it’s even prettier! Just slice the tomatoes to your liking and cut up (or tear) hunks of mozzarella. Then sprinkle with fresh basil and drizzle with the glaze. This one is a crowd-pleaser.

Ultra-Easy Grilled Branzino

Finally, I made fish on the grill and I’m obsessed with this method! I bought branzino, washed it off, drizzled it with a little olive oil and put a lemon slice on top of each filet, along with a sprig of thyme. Then I put them on the grill, skin down, on top of aluminum foil and closed the grill. Five minutes later, you take a spatula, carefully remove the fish so the skin stays on the foil, and voila! Perfectly cooked fish. For a delicious sauce, I mix the juice of one lemon with high quality olive oil, capers, red onion and if I’m feel ambitious, diced Castelvetrano olives. It makes me feel like I’m eating dinner on some exotic Greek island, when I’m really just in my backyard!
