Looking for a Fresh, Satisfying Lunch? This Cabbage Salad Is the Answer

If you’ve ever scrolled TikTok in search of dinner inspiration, chances are you’ve bookmarked a recipe from chef Violet Witchel. The Substack creator went viral for her fiber-rich, ultra-satisfying, dense bean salad — and she’s been a go-to for smart, nourishing meals ever since.

Because Witchel is something of a salad savant, we asked her to share a nutritious, flavor-forward dish that delivers as many nutrients as it does craveable taste. Witchel lent us her recipe for a cabbage, rotisserie chicken, and edamame salad that'll help you reach your protein goals.

"This salad is packed with cabbage, which is one of my favorite ingredients to cook with," Witchel told us. "It's flavorful and crunchy and almost tastes like slaw. And it has loads of prebiotic fiber to feed all the good bacteria you get from the kimchi."

Plus, the tangy miso, lime, and rice vinegar dressing ties the meal together so well that you might start making it whenever you need to add a zesty kick to any meal.

Healthy Herby Cabbage Salad

Makes: 6-8 servings
Cook Time: 2 hrs

Ingredients

  • 4 cups very thinly shredded cabbage, about ¼ of a cabbage
  • 5 cucumbers, very thinly mandolined
  • ½ a bunch of cilantro, roughly chopped
  • 1 10 oz bag of Edamame beans
  • ½ cup of kimchi, excess juice drained off, chopped
  • 1 rotisserie chicken, broken down

For the dressing

  • ¼ cup avocado oil
  • 3 tbs rice vinegar
  • 2 tbs miso paste
  • Juice of 1 lime
  • 1 tbs brown sugar
  • 1 tsp Kosher salt

Instructions

  1. Use a mandolin or very sharp knife to thinly slice the cabbage and cucumbers.
  2. Add them to a large bowl with the edamame beans, kimchi, and chicken.
  3. In a small container, whisk the avocado oil, rice vinegar, miso paste, lime juice, brown sugar, and salt.
  4. Drizzle the dressing over the salad and gently toss. Enjoy!
