This protein-packed, savory meal looks almost like a beautiful pie, and comes together in minutes. Instead of topping with fruit, you’ll find the cucumber and mint to be refreshingly flavorful — and an easy, no-cook way to boost your family’s veggie intake.

- 1 (3-inch) piece English cucumber
- 3/4 cup plain nonfat Greek yogurt
- 1 Tbsp olive oil
- 1/8 tsp salt
- 16 leaves fresh mint
*Slice the 3-inch-long piece of cucumber into quarters lengthwise. Then slice the four (3-inch-long) pieces into thin slices crosswise.
*Scatter half the cucumber pieces onto a plate or shallow bowl. Dollop the yogurt onto the cucumbers. Spread it with the back of a spoon. Attractively arrange the remaining cucumber on the yogurt.
*Drizzle with the oil. Sprinkle with the salt and mint leaves. Serve.
