The Heart-Healthy, Protein-Packed Recipe Your Whole Family Will Love

Finding a heart-healthy, diabetes-friendly summer dinner recipe that ALSO tastes good sometimes feels like looking for a needle in a haystack. Luckily, American Diabetes Association chef, nutritionist, and author of The Clean & Simple Diabetes CookbookJackie Newgent, has shared her recipe for a savory yogurt dish that the whole family will love — we promise! This protein-packed, savory meal looks almost like a beautiful pie, and comes together in minutes. Instead of topping with fruit, you’ll find the cucumber and mint to be refreshingly flavorful —  and an easy, no-cook way to boost your family’s veggie intake.

Ingredients:

  • 1 (3-inch) piece English cucumber
  • 3/4 cup plain nonfat Greek yogurt
  • 1 Tbsp olive oil
  • 1/8 tsp salt
  • 16 leaves fresh mint

Directions:

*Slice the 3-inch-long piece of cucumber into quarters lengthwise. Then slice the four (3-inch-long) pieces into thin slices crosswise.

*Scatter half the cucumber pieces onto a plate or shallow bowl. Dollop the yogurt onto the cucumbers. Spread it with the back of a spoon. Attractively arrange the remaining cucumber on the yogurt.

*Drizzle with the oil. Sprinkle with the salt and mint leaves. Serve.
