Syrniki (with Lifeway Farmer Cheese)

Serving size: 8-10

Ingredients

  • 1 lb. (16 oz.) Lifeway Farmer Cheese
  • 1 large egg
  • 3–4 Tbsp sugar (adjust to taste)
  • 1 tsp vanilla extract (optional)
  • Pinch of salt
  • ½ cup all-purpose flour, divided
  • 2–3 tbsp raisins (optional)
  • Butter or neutral oil for frying

Instructions

  1. Mix cheese, egg, sugar, vanilla, and salt in a bowl.
  2. Add about ¼ cup flour. Fold in raisins if using.
  3. Shape into 2.5 to 3″ patties and dredge in remaining flour.
  4. Fry over medium heat for 3–4 minutes per side until golden brown.
  5. Serve warm with sour cream, jam, honey, or fresh berries. 
  6. Optional: dust with powdered sugar.
