Beat the Heat With This Refreshing Citrus Slaw

As you probably imagined, this side dish is an easy way to get your veggies: “…it uses up an entire head of cabbage, along with carrot, green onions, and a full broccoli stem.” Plus, if you’re averse to mayo-heavy slaw, you’ll enjoy Bodrug’s light dressing, a bright and breezy alternative just as flavorful as a more traditional drizzle. Citrus Cabbage Slaw Recipe

Makes 4 servings

From start to finish: 10 minutes

Ingredients

  • 1 small red cabbage sliced thinly (about 8 cups)
  • 1 red onion sliced thinly
  • 1 large carrot, grated
  • 6 green onions sliced thinly
  • 1 broccoli stem, grated

Citrus dressing

  • 3 tablespoons apple cider vinegar
  • 1 ½ tablespoons pure maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, minced
  • Juice of 1 orange
  • 1 teaspoon orange zest
  • 1 teaspoon sesame oil (optional but recommended)
  • 1 teaspoon salt

Ingredients

  1. In a bowl, combine the cabbage, red onion, carrot, green onions, and grated broccoli stem.
  2. Make the dressing: In a jar or other container, whisk together all the dressing ingredients until combined. Pour the dressing over the salad, toss until coated, and enjoy.
  3. Storage: Store, fully prepared, in the fridge for up to 5 days.
