Substack star Caroline Chambers came out with a new book this week. Among the pages of What to Cook When You Don’t Feel Like Cooking: Make It Fast, you'll find plenty of fresh and delicious weeknight meals, but we're especially in love with her lemon oregano chicken and squash.

Chicken thighs provide the protein, while zucchini or yellow squash will ensure you get your veggies.
