2 Large very ripe bananas ( dark spots appreciated )
1 TBSP arrowroot starch
2 TBSP cassava flour
2 TBSP coconut flour
1/2 tsp baking soda
1/4 tsp ground fresh vanilla
1/2 tsp cinnamon
1/2 tsp salt
1 TBSP maple sugar, coconut sugar, or date sugar
1/8 cup nut butter of choice or palm shortening or solid coconut oil
1/4 cup shredded coconut
raisins, dark chocolate chips, cocoa nibs, frozen blueberries, nuts.
TO MAKE –
Preheat oven to 375
Line a baking sheet with parchment paper.
Peel bananas and place everything, except any optional items, in a high speed blender.
Blend until smooth.
Add any optional items now by folding in
Drop a TBSP of dough on parchment covered baking sheet and bake until firm and a bit brown 10-17 min
